This was a fun take on eggs. I didn't have any problem with the eggs breaking, I was worried I wouldn't be able to flip the egg base over without it breaking but it was fine. You just need a big spatula and make sure you don't flip it too soon (but don't let it burn either). I skipped out on pepperoni since processed meats are full of carcinogenic nitrites, and I used sliced mushrooms and nitrite-free prosciutto crudo instead. Would make again with other toppings. I embellished my tomato sauce with some minced garlic and onion as well.
