Hi - do you happen to have a pic of the interior of the bread? It might help me to determine if stickiness was from proofing. The bread itself is normally a little damp feeling inside, but that’s a characteristic I personally like about it and it means it stays fresh for a while due to its hydration. It shouldn’t however be gummy and super sticky, that’s usually a sign of underproofing xo

This was the inside of the slightly sticky loaf. It rested for about 2 hours before it was cut and felt less sticky the next day. It was still very yummy!! When I made the bread, it was quite cold. The next loaf I made, I reduced the water slightly and put it somewhere when I could maintain a warmer temperature and it was much better, my mum even said my best one yet!!!

That’s great to hear your adjustments the second time round benefitted the loaf! With sourdough you’re constantly learning and adjusting, you learn something new with every loaf!
