We replaced the sweet potato with butternut, because that’s what we had. I drizzled olive oil and salt on the pan and baked it for 45 mins skin side up. I added only half the tamato sauce and added 2 cups of vegetable stock with dried lentils to the onion and garlic mixture and let it cook out. Next time I’ll add a can of chopped tomatoes to the mixture too. I added fresh dill to the sauce, but think the dried dill would work just as well if you don’t have fresh ingredients on hand. Also just added one garlic clove, and it was delicious. Would try the two next time. The taste is well balanced and this will definitely be made in our house again!
