Super tasty, easy, and wholesome. Highly recommend this one. Some notes:
-add in bell peppers at same time as chickpeas for crunchier texture
-prefer orange bell pepper to red (green could work as well maybe)
-don’t skimp on the cilantro & lime
-added 3 cloves of garlic
-used homemade veg broth
-used an entire bag of spinach (6 oz) which worked proportionally with other ingredients
-1 cup brown lentils + 1 can chickpeas was good, 2 cans chickpeas as stated in recipe could also be good!
