Definitely will be making this one again. I roasted a red bell pepper along with the tomatoes. Very creamy, quite flavorful! Perfect with our carmelized onion grilled cheese sandwiches.
This is one for batch cooking, when you have at least a couple of hours to cook.
I don’t have an immersion blender, so I ran this in batches in my Ninja on “ultra blend”—you can’t even tell I didn’t remove the peels from the tomatoes or peppers.
