This proved to be a yummy and delicious banana bread. Adding walnuts was perfect, we had some we needed to use more than the listed pecans. It was moist and tasty, I baked with a kid and it was fun and easy, we all ate the loaf for less than a day because it went so fast it was so good. Fed five of us with second servings each, and we put the batter that wouldnt fit in our loaf pan into muffin tins, they baked up quick. Mashing bananas with a potato masher was easy, recipe says you can use a mixer but I only used mine for the batter. Taught my niece how to use a hand mixer, she's confident now. We probably doubled the amount of mashed bananas, idk, we didn't measure but it was put them in the loaf or compost them, and we just put them in and it was yummy and fine, just added to the bake time, maybe 10 min. Even after 90 min wrapped in a towel on a long car ride we arrived to my sister's with a warm loaf. Happy Easter.
