Replaced the 3tbsp curry paste with a tbsp strong curry powder, and it was overpowering. Ginger flavour was strong. Good to have extra coconut milk or yoghurt to hand just in case

The Thai curry paste would be what gives it most of the flavour, curry powder is not the best substitute so it would be a strange tasting replacement. :D

I actually use a teaspoon of curry powder and a squirt siracha in place of the curry paste. Curry powder is recommended by lots of sites as a substitute!
