Extraordinarily delicious beef stew! The chuck tasted like gourmet steak cuts! The wine/cognac/beef broth was very rich and delish. One alteration to the recipe was to use beef stock gel (heaping tablespoons) in place of beef broth. One alteration I will consider next time I make it is to reduce the cognac from 1/2 cup to 1/4 cup.
