Overall, this was a great dish BUT it was really time intensive and I felt that it required a little of many ingredients that you may not use before the expire. I recommend planning ahead to make dishes throughout the week that require galang root, ginger, and makrut lime. I would also get jicama for the carrot slaw (if just says three cups of vegetables) and to dice them thin themselves rather than shredding. I would also use only 1/2C of light brown sugar for the slaw.
