The recipe asked you to cut the meat off the bone when it’s soft and add it back into the stew. Unfortunately, I followed that suggestion and it was terrible. The meat off the bone is so chewy! The rest of the flavors blend beautifully. Just leave the meat portion out.

If the meat was chewy, then you didn't cook it long enough. Cook meat until it's fall off the bone tender.
