Not quick or easy but delicious. I wasn’t going to make this ever again but it was really tasty. Maybe I can find some way to prepare ahead or get the chicken off the bones. I could cook breasts in the IP and shred them in the kitchen aid. Also I used bought red diced onion, julienned carrots, broccoli slaw. The carrots tasted raw. Maybe frozen onions and peppers would be better plus broccoli slaw. This last time was shredded chicken I cooked in the instant pot. I think you could use cream of chicken soup instead of the broth and roux. Cook 1 pkg of thighs at 10 min in instant pot with 1 c broth. Hold release 5 min then full release. Shred in kitchen aid. I’ve been using shredded chicken and mirepoix for the filling. Used cream of mushroom soup for the liquid. I should have diluted it in milk. The cream of chicken should be better. Tried frozen thighs, six of them on high 12 minutes, natural release 10 minutes.
