Made as a desperate last-minute dinner after getting home way later than planned. This recipe came thru. Perfect paired with some garlic knots from the freezer!
I brined my chicken with salt water after cutting into pieces, then cut my broccoli and preheated the oven while the chicken brined, then dried the chicken well with paper towels before adding it to the sheet pan. I’ve never ever had dry chicken come out using this method.
I also used crushed fresh garlic in the dressing instead of garlic powder bc I needed to use some up. I’m confident garlic powder would be perfect too. It would even stick better to the chicken pieces.
I whisked it with a whisk attachment for a hand blender, but if you don’t have a similar option I’m 99.9% sure you could just shake all the ingredients in a mason jar and get great results… probably better than trying to whisk by hand.
BOTH my picky kids loved it, but they both like salt and vinegar chips…. another reason I had to try. And it wasn’t even close to boring for my partner and I! It’s rare something so easy pleases us all.
Wish I took a photo before it flew off the sheet pan. I didn’t even use a plate, to be honest.
