I cooked 2 large chicken breasts (about 2 lbs of meat?) and the recipe made twice as much sauce as I’ll need. So I saved half in a jar. Making this a second time will be even easier.
I also leave a little sauce out to put directly on rice for those who don’t eat meat.
Tasted good. I added a drizzle of soy sauce and some red pepper flakes for more flavor. I would put red pepper flakes in to cook for the last half hour or so if whole family is ok with spice.
For future I would add Thai basil in addition to the cilantro as a topping.
