Prepared the salmon separately in the oven, seasoned with salt, pepper, garlic, onion powder and dill. Topped with slices of lemon.
Used regular and sweet potatoes which went nicely with the creamy sauce (did half and half soy cream and regular cream).
The capers and lemon balance out the sweetness.
Texture wise might be best to cut the leek in half lengthwise as well because the inside will remain chewier than the outside.
