I used about 3/4 pound of white mushrooms and half a pound of assorted mushrooms (shitake, oyster and some other kind) it was the "stir fry mix". It was very good, but took way longer than 25 minutes. After all the time it took, it was not enough better than the packaged mushroom risotto if it's just for me. Of course I still have half a jar of outrageously expensive arborio rice I have to use up. Some time when I have a spare couple of hours and want to impress someone! But I won't make it just for myself.
