Great idea! I took the bones of this recipe and tweaked it to make it vegan.
Added spinach, kale and mix greens as a base
Roasted sweet potato, beets and carrot with rosemary, s&p and olive oil
Roasted a can of chickpeas with some spices
Top the salad with peat, pecans and hemp seeds
Used the same dressing and *chef kiss*
Such a good winter salad. Super filling
