Seriously tasty and seriously easy. I used a mix of gruyère and cheddar and I used a pack of pancetta cubes instead of bacon to posh it up a bit. Had a pack of ready rolled short crust pastry that I blind baked in a tart tin and it made such an easy lunch for 4 of us with a bit leftover. Everyone went back for seconds 😂 even my husband who doesn't like quiche!
