Prep time is a bit consuming but it's worth it. Made it more burrito style. Tasted great. Also I'm not actually vegan and just used regular cheese.

I get the prep time for Mexican food 🥑 that's why I try to plug in leftovers for the protein and fiber and just chop fresh ingredients especially during the week thanks for reminding me why I do it that way Lisa
