So I made it wrong but for the better. Don’t brown the Turkey and dry it out. I used thigh and steaks cut up, shredded too not mince. Make the sauce then poach/broil the turkey in the sauce, till tender. I also doubled the garlic the chipotle and added a teaspoon of Cajun, half teaspoon of cayenne. Added sweetcorn to the base along with kale (blanched, drained) and a handful of grated cheddar to thicken up the base to make it more sturdy, before putting the base in a hot oven for 15mins and before adding the creamy pasta topping for the final 20mins bake time. I also did a gluten free version using rice/corn pasta which doesn’t stick cos the mascarpone is so creamy. Delicious.
