I make similar to this all the time. I live in Alaska and fish a lot, so always have a lot of salmon to play with. I foil the basket easier cleanup and keeps juices in. For spices, combos of a pinch of your fav salt, pepper, lemon pepper, paprika, dill, basil, garlic, mustard seed ...whatever u like or is fresh. Some added fat and acid is key. I use butter and or olive or avacado oil. Sometimes sesame oil is nice too. My go to is to thin slice onions, maybe some bell peppers zuchini or whatever and slices of lemon or lime butter in first, and put the prepped fish in skin up for thicker pcs. I like skin and salt pepper.cook at 400F. Makes the skin crispy and the oils infuse down in to the meat all the down and blends with the veggies at the bottom and makes a bit of sauce while steaming up in to the meat keeping it moist at high temp...its da Bomb!
