This is a pretty versatile recipe. If you are expecting a ton of flavor, this is not the recipe you are looking for unless you add them extra. I am ok with just olive oil and salt. I did add some red onion for flavor and am very glad I did. I used chickpea pasta, but I want to try it again with another grain. I think it would be good with barley or bulgar. Or better yet, I've just been introduced to Kamut and think that would work well. I will make it again, but it will be just for me as my family is not willing to sacrifice flavor. Great lunch and healthy!
