This was pretty easy and really delicious, but a couple of things I would do different next time: take the time to sauté the onions and peppers first, and use real cheese or no cheese at all. The plant based cheese I used turned into a brick on top while the rest of the casserole was a little undercooked; it might have been better to add after removing from the oven. Overall, though, great flavors! Will try this one again!
