Great recipe! Often don't trust online recipes but this is solid. Love feeling full in a healthy way and this dish hits that sweet spot. (ALMOST a 1-dish meal, too, which is always great).
Changes:
- Marinated the chicken in advance with chicken stock powder, salt, and pepper
- Added italian mixed spices to the chicken while frying
- served with chili flakes (provided a good kick)
- added some sugar to bring out a bit of sweetness from the tomatoes, nicely cut some of the acidity from the tomatoes + lemon juice
EDIT: add black olives!
