Fried eggs are served by a degree of doneness: sunny side up, over-
easy, over-medium, or over-hard. For sunny side up, cook the eggs
for 4 minutes or until the white is set and firm. For "over" eggs, add
the eggs to the pan and let cook for 3 minutes. Carefully flip the eggs
using a spatula and cook as follows: over-easy for 2 minutes on sec-
ond side; over-medium, 2 minutes, 15 seconds; over-hard, 2 minutes,
30 seconds or until the yolk is completely firm. You can also break the
yolk before turning for over-hard.
