I added pardon peppers, mushrooms and sweetcorn and chopped coriander to the chicken filling to pack it out and add some veg. I used burrito wraps as they were bigger and served 2 each. Made enough for 3 people. Served with guacamole and sour cream and chive dip.
Made a second time. Added courgette, red pepper, sweetcorn and black beans to the chicken to pad it out. Added more creme fraiche. Served with Tex mex dips. Yummmy!
