You can't add pasta water if you haven't cooked the pasta yet. Start the pasta as step 1. Then when you need that ladle of pasta water, you'll have it. It was all right, but I likely won't make it again. Husband wasn't fond of it. If I can find nduja, I might give it a shot. I used chili garlic sauce, similar to gochujiang or sambal oelek.
