Ingredients
4 servings
1 Tbspoil
Avocado, canola, or any neutral flavored oil will work
2 tspminced garlic
½ tspminced ginger
2 stalksgreen onion
Plus additional for garnish
10 cupschicken broth
I used homemade chicken bone broth but you can use store bought broth
4 Tbspsoy sauce
soup, You can substitute soup soy sauce with regular soy sauce but use a little less
6 cupsfrozen wontons
I use chicken cilantro wontons from Costco
⅛ tspground white pepper
You can use black pepper
Chili garlic sauce
or chili oil, for topping, optional
Instructions
Step 1
In a medium pot, bring water to a boil and cook the wontons according to package instructions.
Step 2
Use the handle of your knife to pound the white part of the green onion stalks into the cutting board to release the flavors
Step 3
Add oil to another large pot and saute green onion stalks under medium heat for about a minute and then add garlic and ginger. If you don’t like garlic and ginger chunks in your soup, grate it into the pot. Saute until the garlic just starts to turn golden.
Step 4
Carefully pour in the broth and allow to simmer for 15 minutes, then use tongs to discard the green onion stalks.
Step 5
Add soup soy sauce and white ground pepper to broth. If the broth is not salty enough, add regular salt as needed to taste.
Step 6
Add the cooked wontons to individual bowls and ladle in the broth. Garnish with green onions and top with chili garlic sauce or chili oil to add a spicy kick (*optional)
