Instant Pot Mushroom Risotto

Risotto in the Instant Pot is SO easy, I don't think I'll ever make it another way. I love this super quick, deceptively simple recipe - it tastes and looks like it took a lot more effort than it actually does! I omitted the spinach and peas this time and it still turned out great; the mushroom and parmesan flavors really came through.

Had no spinach, so subbed in savoy cabbage. Will try making it again, as misread the stock quantities.

This is a go to! Simple and delicious!

Tasty and quick, nice and creamy. But definitely don’t expect 6 portions… it makes maybe 3 and only if none of them are big, hungry boys.

Double it

So quick and easy. Minimal prep work, altogether less than 30 min. And it's delicious, very creamy. Would double it next time to have leftovers.

Used dehydrated mushrooms with fresh mushrooms. Didn’t have spinach or peas. Topped with fresh parsley. Delicious. Easy and quick to make. I’d use less onion next time. Personal taste.

Made this over the weekend. I used fresh peas (Trader Joe's!) and skipped the spinach. I've been a bit of a snob about risotto in the past (stir! stir! stir!) and pleasantly surprised how nice it turns out in the Instant Pot.
