Instructions

Step 1
place all spices in a bowl
Step 2
pat chicken thighs dry and drizzle in olive oil
Step 3
use half of the spice mix to coat the chicken
Step 4
sautee thighs in the pressure cooker for three-five minutes each side then set aside
Step 5
add in chopped onion and saute for two minutes
Step 6
pour in chicken stock and deglaze pot by scrubbing the brown bits off the bottom
Step 7
layer the browned chicken in the bottom of the pot
Step 8
add rice and rest of spice mix into the pot and add another 1 1/2 cups of chicken stock (375ml) to the pot
Step 9
with venting knob in the venting position, close the lid and seal the knob
Step 10
pressure cook for 7 minutes and natural release for 12 minutes
Step 11
(optional) remove chicken and shred before adding back into rice
Step 12
season with salt to taste
Step 13
sprinkle rice with lemon and coriander
