To begin, we need to prepare the chicken thighs. Start by making cuts along the bone's length. Then, use small cuts to open up the thighs along their length, creating space for seasoning and cooking. I suggest watching the video for visual instructions.

Arrange the chicken thighs on the air fryer rack, alternating them vertically with the bone up and then bone down to make the most of the space.

In a bowl, mix all the spices: Italian seasoning, garlic powder, onion powder, smoked paprika, salt, and black pepper. Once our mixture is ready, sprinkle it onto our thighs, half on the front side, then flip and apply the other half to the back side.

Place in the Air Fryer at 350°F for 20 minutes. Flip the thighs and cook for an additional 10 minutes. While the chicken is cooking, prepare the salad.

Wash the cabbage and remove the outer leaves and stem. Thinly shred the cabbage with a knife, adjusting the thickness to your preference. Cut the shredded cabbage in half, or more if it's too long. Shred the carrots and combine them with the cabbage in a large bowl.

For the dressing, combine mayonnaise, celery seeds, vinegar, salt, pepper, and honey. Mix well and add it to the salad.
