Grilled Burrata Toast with Balsamic Basil Marinated Strawberries

Grilled sourdough toast topped with burrata cheese, marinated balsamic basil strawberries and chopped pistachios. This is a really fun (and delicious!) way to enjoy strawberries this summer 🍓

or balsamic glaze - you want the thicker kind

Instructions
For the grilled toast:
Step 1
Drizzle the bread with a bit of extra virgin olive oil on both sides, and then grill in frying pan until nice and crispy on both sides. You want it really crispy to hold up to the toppings! Alternatively, you can toast the bread in the toaster without any oil. This would also be great on some toasted baguette.
For the balsamic basil strawberries:

Mix together the quartered berries, mashed berries, julienned basil, extra virgin olive oil and aged balsamic/balsamic glaze in a small bowl. Give it a taste and feel free to add a little 1/2 teaspoon of granulated sugar if you feel your berries need it. The sweetness of the berries and the balsamic everyone uses will vary, so just adjust to your level of desired sweetness.
To assemble
Step 3
Spread the burrata or ricotta cheese onto the grilled toast. Zest a bit of lemon over the cheese. Spoon the strawberry balsamic mixture over the top of the cheese. Finish with a sprinkling of pistachios, a little more lemon zest and a little drizzle of thick balsamic vinegar. See note below about making your own thick balsamic if you need to!

If you don’t have thick aged balsamic vinegar, or balsamic glaze you can very easily make some at home using normal balsamic vinegar. Simply pour about a half a cup of vinegar into a small saucepan and gently bring to a boil. Reduce to simmer, stirring occassionally, until the vinegar has thickened into a more syrupy consistency. This can take about 10-15 minutes.
