Cauliflower Rice and Beans Fajita Bowls

Instructions

Step 1
Preheat oven to 400 degrees F. Lightly wipe a baking pan with olive oil or line with aluminum foil.
Step 2
Combine cauliflower, pepper, onion, mushrooms, garlic, and spices and spread on the baking sheet. Bake for 20 minutes or until vegetables are tender, stirring occasionally.
Step 3
Divide cauliflower mixture among four bowls. Top with pinto beans, avocado, pumpkin seeds and green onion. Drizzle with lime juice and if desired, add a dollop of salsa.
