Step 1
Boil a pot of salted water for pasta. Cook pasta to your liking (I used pappardelle) and set aside.
Step 2
Butterfly chicken breasts. On a plate, mix some flour with any seasonings you like. I let it simple and did salt, pepper, garlic powder, and Chicago steak seasoning. Coat your chicken breasts in the flour mixture and set aside.
Step 3
In a large skillet, heat up some olive oil. Fry chicken breasts until slightly golden on each side. Side aside.
Step 4
In the same pan, pour in some more oil and toss in a tablespoon of butter. Cook mushrooms, shallots, and minced garlic. Season to taste and cook for 3-4 minutes.
Step 5
Add in marsala wine to deglaze the pan. Add in chicken broth next. Then heavy whipping cream. Mix everything.
Step 6
Put the chicken breasts back into the pan. Coat the chicken with the sauce and let it cook off until the chicken is cooked through. Add cornstarch slurry if you want to thicken the sauce. Top with fresh chopping parsley.
Step 7
Plate up! Grab a bowl of pasta, top it with the sauce mix and chicken. Garnish with Parmesan cheese and more parsley. Enjoy!! :)
