Step 1
Melt butter completely. Rub lemon zest into sugar to release essential oils. Add butter and vanilla to lemon sugar mixture. Whisk until combined. Add eggs and whisk until combined. Add lemon juice and whisk.

Mix dry ingredients - flour, baking powder, salt

Add dry ingredients to butter lemon mixture

Dough may be runny (don’t panic) - let chill at least 2 hours
Step 5
Coat spoon in icing sugar and shape dough into 1 tbsp balls - roll in granulated sugar and dust off extra. Generously roll in icing sugar
Step 6
Cook at 350° for 8-10 minutes. One tray at a time (keep dough in fridge in between). Cookies are done when cracks no longer look wet/shiny
Step 7
Let cool 10 minutes before transferring to wire rack
