Ingredients
4 servings
1whole chicken
skinless and deboned, can replace with 3lb boneless skinless breast or thighs
1 x 8 oztomato sauce
can, mixed with about
4 ozchopped tomatoes
1jalapeño
minced
2chipotle peppers
chopped, could use 1 can rotel with 2 chopped chipotle peppers instead
1 ½ Tbspbutter
1yellow onion
medium, quartered and sliced
2 TbspTaco seasoning
or southwest your choice, mine is a homemade blend of garlic powder, onion powder, cumin, smoked paprika, chili powder, ground cayenne, oregano, and cinnamon

Instructions
Step 1
1. Put butter and onions in bottom of crockpot on high, cover and cook approx 15-30 minutes until onions become translucent or start to caramelize. Season chicken with salt and pepper then taco/southwest seasoning.
Step 2
2. Add chicken to crockpot and cover with tomato sauce/rotel mixture.
Step 3
3. Cover and cook on high 3-5 hours, stirring occasionally, until chicken is tender and starts to fall apart.
