Millionaires shortbread

This recipe has the most delicious Caramel centre... to die for!

Instructions

Bake your shortbread:

Step 1
Preheat oven to 180°C
Step 2
Make sure your margarine is at room temperature. Cut into cubes and mix with flour until a crumby texture is achieved

Firmly press flour mixture into a line baking tray (I usually just spray with cooking spray). Poke holes with a fork into the pressed-down mixture

Bake for 20-25 minutes or until a pale gold on top

Set aside to cool

Make your Caramel

Step 6
*only make Caramel once shortbread is ready because it has to be poured on hot

In a large saucepan combine condensed milk, butter, sugar, syrup and a pinch of salt

Melt on low-medium heat until everything is dissolved and incorporated (stirring frequently)
Step 9
Turn heat on high and let mixture come to boiling point. Be careful to stir constantly as the mixture will catch and burn easily

Allow to boil (while still stirring) until mixture thickens and changed to a golden brown colour
Step 11
Pour Caramel onto shortbread, spread smoothly to cover over all the shortbread and refrigerate for 1 hour

Chocolate topping

Step 12
Melt chocolate and coconut oil in double boiler or microwave (careful to only heat for 30 seconds at a time so as not to burn)

Pour mixture over Caramel to cover whole surface or place chocolate in a piping bag and pipe onto Caramel to create a zig-zag pattern.

Allow to set in fridge for 3-4 hours or overnight
