Instructions
Step 1
Allow the chicken to rest at room temperature for at least 30 minutes before starting.
Step 2
Apply an even layer of coarse kosher salt under the skin of the entire chicken.
Step 3
Slice one lemon into 6 thin, even slices, then place under the skin of the chicken. Two slices for each chicken breast, and one for each leg.
Step 4
Stuff the inside of the chicken with half of one lemon, the fresh herbs, and the garlic, then tie the chickens legs together and the wings down to the sides of the chicken.
Step 5
Coat the chicken with olive oil and season with all dried seasonings.
Step 6
Place the whole chicken in a roasting pan, with air underneath for circulation.
Step 7
Bake the chicken at 450F for 1 hour, or until it reaches 155F internal temp.
Step 8
Allow the chicken to rest, out of the oven, for an additional 10 minutes to come to temp. Enjoy.
