Weeknight Dal

Creating a versatile, one-pot dal recipe has been a journey. This version is complete with vegetables and a mix of dals for a well-balanced, weeknight meal. Don't have all the dals or vegetables on hand? What I love about dal is that you can tailor it to what you have on hand. Use only moong dal for this recipe if looking to keep it simple. Replace Indian vegetables with zucchini or add spinach at the end. The options are endless!

Instructions

Step 1
Peel and chop dudhi into 1/2'' - 1'' cubes.
Step 2
Slice tindora, discarding ends.
Step 3
Chop green chiles into fine pieces.
Step 4
Rinse dal.
Step 5
Turn instapot on 'Saute'.
Step 6
Melt ghee.
Step 7
Saute cumin seeds until spluttering.
Step 8
Add chopped green chiles and stir.
Step 9
Add ginger garlic paste and stir.
Step 10
Add curry leaves.
Step 11
Add vegetables and stir.
Step 12
Add asafetida and salt.
Step 13
Add dal and stir to mix evenly.
Step 14
Add water.
Step 15
Close lid and set to 'high' pressure cook for 12 minutes. Allow natural release.
Step 16
Allow natural release. Stir. Mix in chopped cilantro, if using.
Step 17
Serve with rice and pickle for an easy weeknight meal!
