Pistachio Butter Tzatziki

Tzatziki is such a simple and delicious dip, elevated with flavours from fresh herbs, lemon and garlic. This pistachio butter tzatziki takes a classic favourite and spruces it up, adding a delicious pop of nutty pistachio.

Ingredients

2cucumbers
1 cupfull-fat Greek yoghurt
¼ cuppistachio butter
1 tablespoonextra virgin olive oil
1clove garlic
crushed
¼ cupdill
fresh, finely chopped
¼ cupmint
fresh, finely chopped
0.5lemon
zested and juiced
salt
pepper

Instructions
Step 1
Begin by grating the cucumbers. Place in a sieve, and drain of excess water by pressing the cucumber with a spoon.
Step 2
In a mixing bowl, combine the drained cucumbers, Greek yoghurt, pistachio butter, lemon zest, lemon juice, crushed garlic, dill, mint and olive oil.
Step 3
Mix all the ingredients until they are well combined.
Step 4
Season with salt and pepper to taste.
Step 5
Cover the bowl and let sit in the fridge for at least 15 minutes.
Step 6
Serve topped with pistachios, pickled onion, extra herbs and a drizzle of olive oil.
