Step 1
Preheat oven to 375°
Step 2
Sauté sausage on medium high heat until browned. Remove with slotted spoon and transfer to large mixing bowl.
Step 3
Reserve 1 tbsp grease in pan, drain the rest. Sauté onion and pepper 5 minutes or until soft. Add garlic and sauté 2 minutes
Step 4
Add vegetable mixture to sausage along with hash browns and most of the cheese. Stir to combine
Step 5
In separate bowl, whisk together eggs, milk, and salt and pepper. Add to hash brown mixture.
Step 6
Pour into 8x8 baking dish and top with remaining cheese.
Step 7
Cover with foil and bake 30 minutes, then remove foil and bake 10-15 minutes until golden brown and set.
