Step 1
Heat oil in large saucepan and stir in onions, garlic, cumin seeds, and oregano. Cover and gentle cook for 5 min stirring occasionally,
Put 3 of the 4 cups thawed corn into food processor with polenta and smoked paprika and blitz briefly until combined but not totally smooth.
Pour into pot with onion mixture and stir add stock I cup at a time so polenta mixes well and doesn’t go lumpy. Add remaining corn and chilli flakes, salt and pepper and bring to boil. Simmer partly covered for 15 mins stirring occasionally. Stir through lemon juice and then serve.
