Seedless Blueberry/Elderberry Jam No water bath!
Made the german way. No water bath necessary. Don't leave out the salt!

Instructions
Step 1
Place ceramic plate in freezer
Step 2
Cook berries on medium high heat with sugar, salt and lemon juice till sugar is dissolved, a out 3-5 minutes.
Step 3
Stir every few seconds.
Step 4
Remove from heat and strain. Can leave in some bits and seeds if preferred.
Step 5
Boil 6-7 minutes till temp reaches 220F
Step 6
Test spoonful on cold plate. Wait 30 seconds. If jam doesn't wrinkle when moved, heat another minute. Repeat test till it wrinkles when moved.
Step 7
Pour into sterile jars. I wash and rinse jars well then place wet into the microwave for 1 minute on high. Leave about 1/4 to 1/2 inch heads space on top. Once closed slightly tight, allow to cool completely. Make sure all jars have properly sealed.
