Instructions

Step 1
1. Cut potatoes, mushrooms & onions into bite sized pieces 2. Boil potatoes in salted water for about 20 minutes or until almost cooked 3. Meanwhile, fry olive oil, onion & garlic in a frying pan until tender before adding spinach, mushrooms & seasonings & cooking until spinach is wilted 4. Mix together ricotta, shredded cheese & season with salt & pepper 5. After draining potatoes, mix spinach & mushroom mixture through before adding the cheese mixture & combining well 6. Transfer to a lined deep baking tray, sprinkle breadcrumbs over the top & place in 180º preheated oven for 20 minutes or until breadcrumbs are golden
