Step 1
Heat the oil in a large saucepan on medium heat and add in the leeks. Cover and leave to cook for around 3 minutes. Add the potato and cook for a further 2 minutes, mixing constantly. Add in the stock, season and then bring to the boil before simmering for 20 minutes.
