Instructions

Step 1
Add the potatoes to a pot of boiling water and bring to the boil. Simmer for 10 minutes before draining.
Step 2
In the meantime, heat some oil in a pan and fry the onions and garlic until softening.
Step 3
Add the onions and garlic to the potatoes along with a drop of oil and put on low heat. Add in the spices and gently stir so that they cling to the vegetables.
Step 4
Add the tomatoes and tomatoes purée before bringing to the boil. Turn to a simmer and add in a handful of spinach before covering. Allow the spinach to wilt and then mix it in and then add the next handful.
Step 5
Repeat this process until all the spinach is used (it should take 8-15 minutes).
