Instructions

Step 1
Preheat oven to 350°F, or 180°C

Crust

Step 2
Beat the butter in a large mixing bowl with an electric mixer until fluffy, about 1 minute.

Add the flour and confectioners sugar. Mix until it turns into a soft dough.
Step 4
Transfer into an ungreased 9- by 13- inch baking pan.
Step 5
Press dough into pan, and bake for 20 minutes.
Step 6
Take the pan out of the oven and set aside to cool, but leave the pan turned on.

Filling

Step 7
Beat the eggs and sugar together in a large bowl with an electric mixer.
Step 8
Blend in the flour, then mix in the lemon juice, lemon zest, and vanilla.

Final product

Pour the filling over the cooled crust and tilt the pan to spread evenly.
Step 10
Bake the bars for 25 minutes, cool slightly, then dust lightly with confectioners sugar using a sifter. Slice into 24 small bars.
