Lentil, sweet potato and Goats cheese

Something I ate in a cafe and have tried to recreate at home.

Instructions

Step 1
Put the rinsed lentils in a saucepan and add 3 times the amount of stock, cook for 35 minutes
Step 2
Put the sweet potatoes in an oven dish, drizzle some extra Virgin olive oil and add the spices and roast for 35 minutes or so.
Step 3
Put the pepper in the oven for about 10 minutes so it is softening. Slice into strips.
Step 4
For the last 5 minutes of cooking the pepper add the cherry tomato halves so they soften slightly but don't go mushy
Step 5
Cool the runner beans(or fine beans) for a few minutes then drain and cool. Don't blanch in cold water as that removes vitamins
Step 6
Last 5 minutes of cooking the sweet potato add the chevre Goats cheese until soft
Step 7
This can be all eaten cold or hot.
