Instructions
Step 1
Start by soaking 2 gelatin leaves in cold water.
Step 2
In a saucepan, heat 160ml of cream together with 50g of sugar.
Step 3
Squeeze the excess water from the soaked gelatin leaves and add them to the heated cream. Also, mix in the 340ml of liquid cream while stirring.
Step 4
Place the mixture back on the stove, continuing to stir over low heat.
Step 5
Pour the mixture into ramekins. Allow it to cool and then refrigerate for 2-3 hours until set.
Step 6
Meanwhile, prepare the mango puree by blending a ripe mango until smooth.
Step 7
Once the cream has set, pour a bit of mango coulis on top of each ramekin.
Step 8
Return the ramekins to the refrigerator until the coulis has set.
