Instructions

Step 1
Heat the oven to 220C. Line a baking sheet or roasting tin with parchment paper and coat with cooking spray.
Step 2
Prepare the breading station. Combine the breadcrumbs 1tsp sea salt, black pepper and polenta in a large bowl . Whisk the egg with the flour and add water until it's a thick consistency that will make the breadcrumbs stick. At this point I sometimes add things to the batter like harissa or you can add spices to the breadcrumb mix.
Step 3
Slice the stem off the auberginet and cut the aubergine into fries. Sprinkle with 1 tsp salt and place in a colander in the sink for 15 -30 mins. This draws out the water and also seems to make them more tender when cooked.
Step 4
Dry the aubergine on kitchen roll.
Step 5
Coat the aubergine in egg and then the breadcrumb mix and place onto the lined baking tray.
Step 6
Spray thoroughly with spray oil. Roast, flipping the fries every 10 minutes, until golden-brown and crisp, about 30 minutes total.
