Zabaglione
Step 1
In a double boiler, beat eggs and sugar together until pale yellow. Bring water to a boil, then reduce heat to simmer. Gradually add Marsala, beating continuously for 6-10 minutes until soft mounds appear. Cover and chill for 30 minutes.
Step 2
Whip cream with sugar. Fold mascarpone and Zabaglione mixture into the heavy cream. Refrigerate for 1 hour
Step 3
Arrange cookies in bottom of a 9x 13 pan and spoon ~1 tbsp of coffee mixture over each cookie. Spoon 1/3 of the cheese mixture over cookies and sprinkle with cocoa powder. Repeat two more times.
